MANUFACTURING FEATURES
Manual harvesting. Selection and sorting. Soft pressing. Infusion on the seeds and skins for 24-48 hours. Temperature-controlled alcoholic fermentation in stainless steel containers. Fermentation is ceased by cooling when sugar content reaches 4.5%. Cold stabilization. Filtration. Bottling.
